Potato,Spam and Cheese

 After finishing my job I feel a bit hungry so I rushed down stairs and I saw this lovely gigantic potato sitting on the table. I told myself "This is it!" but I realized having a plain potato with cheese is a bit boring so I checked in my refrigerator to find something nice to add on it and I saw this left over spam and that gave me this brilliant idea of mixing them together in a one epic midnight snack.


Here is my recipe for Mashed boiled potato (slightly coarse) mixed with mashed Spam topped with cheesy goodness. It's easy to prepare and it's very delicious

In this recipe you'll be needing:

1 big potato or 2 medium sized potato

Cheese spread (Chiz Whiz or any brand)

1/4 cup Eden cheese / quick melt cheese (grated)

4 slices of Spam (any luncheon meat/ meat loaf will do)

a pinch of salt

Procedure:

1.Clean your potatoes and remove any black spots if you want to keep the skin but if now just peel your potato. After that placed all the clean potato in a pot and cover the potato with water about an inch. Add a pinch of salt then cover the pot and boil the potato until tender. Big potato takes a long time to boil (about 30-45 minutes) you can cut it into four parts to make it easier to cook.

2. Check your potato if it's cooked by pushing a bamboo skewer or a fork through it. If it slides easily the your potatoes are done. When your potatoes are cooked drain them and transfer to a clean bowl or plate.

3. Mash your potatoes to your desired texture and consistency. After the potatoes, mash your Spam slices as well.

4. Mix your Mashed spam and potatoes together. If it's well mixed transfer to a clean microwavable lunch box. Flatten the surface with a spoon.

5. Add on your cheese spread and spread it evenly with a spoon. Sprinkle Eden cheese / quick melt cheese on top of it then pop it in the microwave oven for 1 minute just to let the grated cheese melt a bit.

6. serve

This serving is good for 2 people.
