Comfort Food #1: Tortang Talong (Eggplant Omelet)



  First on my list as a comfort food is this yummy Tortang Talong (Eggplant Omelet). Since I was a child this is one of my all time favorite dish. It's very simple and tasty. I love the grilled taste of the Eggplant mixed with scrambled egg taste. It's just taste so perfect for me. 


Here's what you'll be needing for this recipe:


4 pcs. Eggplants, average to big size
3 eggs (beaten)
salt and pepper  to taste
oil  for frying




Procedure:


1.Grill eggplants until tender. Set aside.


2. Once the Eggplant is cool, peel off the skins of the eggplant and retain head and the stem. Gently flatten its meat by using a fork. Set aside.


3.In a bowl, beat the eggs and season with salt and pepper. Set aside.


4. In a frying pan, heat oil over a medium heat. Dip each Eggplant, one at a time into the egg mixture. Bring the bowl near the frying pan then gently lower the Eggplant onto the heated oil. Pour a small amount of the egg mixture onto the Eggplant while frying if needed. Fry until golden brown on one side then turn over to brown the other side as well.


5. Drain on a paper towel and serve.




Tortang Talong a perfect breakfast dish that your family will love! Best with Ketchup or Philippine Lemon with Fish Sauce. Enjoy!
